This is comfort food, It's soft moist and delicious with Asian ingredients.
Ingredients
- 500 gm Pork loin steaks, cut to 2cm pieces
- 3 cups Glutinous rice See Note #1
- 1 cup Peas
- 1 tbsp Fresh ginger, grated
- 6 cloves Garlic, grated
- 1 tbsp Oyster sauce
- 1 tbsp Xiao Xing wine
- 1/2 tsp Chinese 5 Spice powder
- 3 tbsp Lee Kum Kee Char Siu sauce
- 1 tbsp Light soy sauce
- 1 tbsp Sesame oil
- 1 Bird's Eye chilli
- 2 Pandan leaves
- 1 tsp Salt
- 2 cups Desiccated coconut – dry roasted
- 1 cup Corn kernals
- 1 cup Diced carrots
- Spray Canola oil
Instructions
- Soak rice in hot water for an hour.
- Tie pandan leaves into a knot.
- Cook rice with 6 cups of water, salt and pandan leaves.
- When rice is boiling, give it one stir, reduce heat to simmer and cover until cooked about 25 minutes.
- In the mean time, heat oil in a wok and add the pork, ginger, garlic and chilli and stir to combine.
- Add the wine and sauce and stir to combine.
- Add the vegetables, 5 spice powder and all other ingredients – taste for seasoning, and cook for 10 minutes.
- Now lightly spray a 30 cm deep baking dish and put a layer of rice about 2 cm deep and level the rice.
- Spread half the pork mixture over the rice then repeat, ending with a rice layer.
- Sprinkle coconut over the top and serve.

Note #1 – Soaking glutinous, red, black and brown rices in hot water helps reduce cooking time.
