Seafood Enchiladas

Ingredients
  

  • 1 kilo Seafood Marinara mix
  • 1 750g can  Diced Tomatoes
  • 1/2 bunch Fresh coriander chopped and divided by 2
  • 1 tbsp Cumin powder
  • 1 tbsp Coriander powder
  • 2 tbsp Sweet smoked Paprika
  • 2 tbsp Dried Oregano
  • 2 tbsp  Dried Thyme
  • 2 tsp Chilli powder optional
  • 2 tbsp Raw Sugar
  • 2 tbsp Grated Garlic
  • 1 pkt  8 Wholemeal wraps
  • 2 cups Pizza Cheese
  • 2 tbsp Rice Bran Oil Not Olive

Instructions
 

  • Preheat the oven to 180C fan forced. Half the quantities of spices, dried herbs, and garlic to make the sauce and the filling.
  • TO MAKE THE SAUCE.
    In a large saucepan on medium heat, add 1 tablespoon each of the oil and garlic and saute for 2 minutes.
  • Add half of the spices, sugar and dried herbs to saucepan and cook for 5 minutes, then add the diced tomatoes and 1/2 the coriander.
  • Cook on simmer for 20 minutes and set aside.
  • FOR THE FILLING.
    In a large frypan, add the oil and garlic and cook for 2 minutes on high heat.
  • Add the rest of the spices, sugar and dried herbs and saute for 3 minutes, then add the seafood mix and beans.
  • Cook for 10 minutes, add fresh coriander and set aside.
  • In a large baking dish, pour 2 cups of sauce and spread the base of dish.
  • Take one wrap at a time, place the seafood mixture 3 centimetres from the edge of wrap, fold sides in and roll until the seams face down and repeat.
  • Place rolls in baking dish, pour rest of sauce over and sprinkle with cheese.
  • Bake in oven for 30 minutes and serve.

Notes

Use any protein and wraps as they are are more pliable than tortillas.
