Instructions
Preheat the oven to 180C fan forced. Half the quantities of spices, dried herbs, and garlic to make the sauce and the filling.
TO MAKE THE SAUCE.
In a large saucepan on medium heat, add 1 tablespoon each of the oil and garlic and saute for 2 minutes.
Add half of the spices, sugar and dried herbs to saucepan and cook for 5 minutes, then add the diced tomatoes and 1/2 the coriander.
Cook on simmer for 20 minutes and set aside.
FOR THE FILLING.
In a large frypan, add the oil and garlic and cook for 2 minutes on high heat.
Add the rest of the spices, sugar and dried herbs and saute for 3 minutes, then add the seafood mix and beans.
Cook for 10 minutes, add fresh coriander and set aside.
In a large baking dish, pour 2 cups of sauce and spread the base of dish.
Take one wrap at a time, place the seafood mixture 3 centimetres from the edge of wrap, fold sides in and roll until the seams face down and repeat.
Place rolls in baking dish, pour rest of sauce over and sprinkle with cheese.
Bake in oven for 30 minutes and serve.
Notes
Use any protein and wraps as they are are more pliable than tortillas.
