A spicy cheese shortbread with peanuts for extra crunch and taste.
Ingredients
- 2 cups Wholemeal SR Flour
- 2 cups Grated Cheddar
- 1 cup Roasted Peanuts
- 125 gb Softened Butter
- 1 tsp Chilli Flakes
- 1 tsp Dry roasted Cumin Seeds
- 1 tsp Turmeric Powder
- 2 sprigs Fresh Curry Leaves finely minced
Instructions
- Put all ingredients into a mixing bowl. Using your fingers gently rub in the butter with all ingredients to form a dough.
- Roll into a log and cut log in half.
- Place each log on separate cling film and roll to form a nice log and place in freezer for 20 minutes.
- Remove logs from cling film and slice each log into 5mm slices. Place on cookie tray with baking paper.
- Put in a preheated oven at 170C Fan Forced for 15 minutes. Let cool on rack completely.
- Serve with a cup of hot tea, a cold beer, shandy or wine or just as a snack.
Notes
If you have a peanut allergy just omit the peanuts.
