Chilli Cheese and Peanut Shorties

A spicy cheese shortbread with peanuts for extra crunch and taste.

Ingredients
  

  • 2 cups Wholemeal SR Flour
  • 2 cups Grated Cheddar
  • 1 cup Roasted Peanuts
  • 125 gb Softened Butter
  • 1 tsp Chilli Flakes
  • 1 tsp Dry roasted Cumin Seeds
  • 1 tsp Turmeric Powder
  • 2 sprigs Fresh Curry Leaves finely minced

Instructions
 

  • Put all ingredients into a mixing bowl. Using your fingers gently rub in the butter with all ingredients to form a dough.
  • Roll into a log and cut log in half.
  • Place each log on separate cling film and roll to form a nice log and place in freezer for 20 minutes.
  • Remove logs from cling film and slice each log into 5mm slices. Place on cookie tray with baking paper.
  • Put in a preheated oven at 170C Fan Forced for 15 minutes. Let cool on rack completely.
  • Serve with a cup of hot tea, a cold beer, shandy or wine or just as a snack.

Notes

If you have a peanut allergy just omit the peanuts.
