A simple and tasty mains for summer.
Ingredients
- 2 Large Chicken breasts, thickly sliced
- 100 gm Baby Spinach leaves
- 100 gm Baby Rocket leaves
- 2 Large Tomatoes, diced
- 4 Celery sticks, diced
- 1 Large Red capsicum, seeded and diced
- 1/2 cup Rice Bran oil
- 1 tbsp Sesame oil
- 1/2 cup Mirin
- 1/4 cup Light Soy sauce
- 4 cloves Garlic, grated
- 1 tsp Chilli flakes
- 2 tbsp Sesame seeds dry roasted
Instructions
- In a bowl, whisk together oils, mirin, soy, garlic and chilli.
- Add chicken slices, mix well and marinate in fridge for an hour.
- Heat a wok and add chicken and marinade.
- Cook stirring for 10 minutes and put chicken on a plate to cool for 20 minutes.
- In a large salad bowl, add all salad ingredients, chicken with sauce and sesame seeds.
- Toss to combine and serve immediately.
