Chicken Salad with Japanese Dressing

Ingredients
  

  • 2 Large Chicken breasts, thickly sliced
  • 100 gm Baby Spinach leaves
  • 100 gm Baby Rocket leaves
  • 2 Large Tomatoes, diced
  • 4 Celery sticks, diced
  • 1 Large Red capsicum, seeded and diced
  • 1/2 cup Rice Bran oil
  • 1 tbsp Sesame oil
  • 1/2 cup Mirin
  • 1/4 cup Light Soy sauce
  • 4 cloves Garlic, grated
  • 1 tsp Chilli flakes
  • 2 tbsp Sesame seeds dry roasted

Instructions
 

  • In a bowl, whisk together oils, mirin, soy, garlic and chilli.
  • Add chicken slices, mix well and marinate in fridge for an hour.
  • Heat a wok and add chicken and marinade.
  • Cook stirring for 10 minutes and put chicken on a plate to cool for 20 minutes.
  • In a large salad bowl, add all salad ingredients, chicken with sauce and sesame seeds.
  • Toss to combine and serve immediately.
