A decadent moist and chewy treat.
Ingredients
- 3.5 cups Desiccated Coconut
- 2 cups Icing Sugar
- 395 gm Sweetened Condensed Milk (1 can)
- 1/4 tsp Cream of Tartar
- 1 tsp Vanilla Extract
- Food Colour of Choice a few drops
- 1 tbsp Butter
Instructions
- Grease a 20cm square cake or 30cm loaf tin.
- Line base and sides with baking paper with a 2cm hang on edges.
- Sift icing sugar and cream of tartar into a large mixing bowl.
- Add the coconut to the bowl and mix well.
- In a jug pour the condensed milk, vanilla and food colouring, mix well.
- Add to dry ingredients and mix well to combine.
- Put coconut mixture into prepared tin and press down, level and smooth top evenly with a spatula.
- Chill in fridge for 2 hours.
- Turn slice over onto a platter. cut into squares and serve.
