Instructions
Grease a 20cm square cake or 30cm loaf tin.
Line base and sides with baking paper with a 2cm hang on edges.
Sift icing sugar and cream of tartar into a large mixing bowl.
Add the coconut to the bowl and mix well.
In a jug pour the condensed milk, vanilla and food colouring, mix well.
Add to dry ingredients and mix well to combine.
Put coconut mixture into prepared tin and press down, level and smooth top evenly with a spatula.
Chill in fridge for 2 hours.
Turn slice over onto a platter. cut into squares and serve.
