A healthy snack or lunch treat for the kids.
Ingredients
- 1 large Zucchini juice squeezed out
- 1 small Onion finely diced
- 4 cloves Garlic grated
- 1 whole Red Chilli finely sliced
- 375 gm tub Smooth Ricotta
- 1 cup Tasty Cheese Grated
- 1/2 cup Sour Light Cream
- 1/2 cup Light Thickened Cream
- 1 tbsp Rice Bran Oil or Vegetable Oil
- Salt to taste
- Pepper to taste
- 1 cup Wholemeal Self Raising Flour
Instructions
- Preheat the oven to 180 degrees Celsius Fan Forced.
- Heat a frypan on low, add oil then onion, garlic and chilli and cook, stirring for 5 minutes.
- In a large bowl add all ingredients and gently fold to combine.
- Spray a 12 cup muffin tin then using a 1/4 cup scoop, spoon mixture in each cup.
- Bake for 30 minutes and serve with salad with sauce, snack or pack for school/work lunch.
Notes
You can add bacon to the mix. If not a fan forced oven bake for 5 to 10 minutes more.
