Instructions
Preheat the oven to 180 degrees Celsius Fan Forced.
Heat a frypan on low, add oil then onion, garlic and chilli and cook, stirring for 5 minutes.
In a large bowl add all ingredients and gently fold to combine.
Spray a 12 cup muffin tin then using a 1/4 cup scoop, spoon mixture in each cup.
Bake for 30 minutes and serve with salad with sauce, snack or pack for school/work lunch.
Notes
You can add bacon to the mix. If not a fan forced oven bake for 5 to 10 minutes more.
