Lean Pork Cakes

Moist pork cakes, healthy and delicious.

Ingredients
  

  • 500 gm Lean Pork mince
  • 1/2 Cauliflower head – riced
  • 4 cloves Garlic – grated
  • 1 tbsp Ginger – grated
  • 1 tsp Chilli flakes – optional
  • 1/2 cup Coriander leaves and stems finely chopped
  • 6 Eggs beaten
  • Salt to taste
  • Spray oil (any)

Instructions
 

  • Preheat oven to 200C fan-forced.
  • Blitz cauliflower – stem and all in a food processor to crumb/rice consistency.
  • Put all ingredients in a large bowl and mix well to combine. Mixture will be slushy.
  • Spray large muffin pan and put 1/2 cup metric cup measurement in each hole.
  • Bake in the oven for 30 minutes.
