Moist pork cakes, healthy and delicious.
Ingredients
- 500 gm Lean Pork mince
- 1/2 Cauliflower head – riced
- 4 cloves Garlic – grated
- 1 tbsp Ginger – grated
- 1 tsp Chilli flakes – optional
- 1/2 cup Coriander leaves and stems finely chopped
- 6 Eggs beaten
- Salt to taste
- Spray oil (any)
Instructions
- Preheat oven to 200C fan-forced.
- Blitz cauliflower – stem and all in a food processor to crumb/rice consistency.
- Put all ingredients in a large bowl and mix well to combine. Mixture will be slushy.
- Spray large muffin pan and put 1/2 cup metric cup measurement in each hole.
- Bake in the oven for 30 minutes.
