Cauliflower head - riced

Garlic - grated

Ginger - grated

Chilli flakes - optional

Coriander leaves and stems finely chopped

Salt to taste
Spray oil (any)
Instructions
Preheat oven to 200C fan-forced.
Blitz cauliflower - stem and all in a food processor to crumb/rice consistency.
Put all ingredients in a large bowl and mix well to combine. Mixture will be slushy.
Spray large muffin pan and put 1/2 cup metric cup measurement in each hole.
Bake in the oven for 30 minutes.
