Coconut Ice

Ingredients
  

  • 3.5 cups Desiccated Coconut
  • 2 cups Icing Sugar
  • 395 gm Sweetened Condensed Milk (1 can)
  • 1/4 tsp Cream of Tartar
  • 1 tsp Vanilla Extract
  • Food Colour of Choice a few drops
  • 1 tbsp Butter

Instructions
 

  • Grease a 20cm square cake or 30cm loaf tin.
  • Line base and sides with baking paper with a 2cm hang on edges.
  • Sift icing sugar and cream of tartar into a large mixing bowl.
  • Add the coconut to the bowl and mix well.
  • In a jug pour the condensed milk, vanilla and food colouring, mix well.
  • Add to dry ingredients and mix well to combine.
  • Put coconut mixture into prepared tin and press down, level and smooth top evenly with a spatula.
  • Chill in fridge for 2 hours.
  • Turn slice over onto a platter. cut into squares and serve.
