Zucchini Bites

Ingredients
  

  • 1 large Zucchini juice squeezed out
  • 1 small Onion finely diced
  • 4 cloves Garlic grated
  • 1 whole Red Chilli finely sliced
  • 375 gm tub Smooth Ricotta
  • 1 cup Tasty Cheese Grated
  • 1/2 cup Sour Light Cream
  • 1/2 cup Light Thickened Cream
  • 1 tbsp Rice Bran Oil or Vegetable Oil
  • Salt to taste
  • Pepper to taste
  • 1 cup Wholemeal Self Raising Flour

Instructions
 

  • Preheat the oven to 180 degrees Celsius Fan Forced.
  • Heat a frypan on low, add oil then onion, garlic and chilli and cook, stirring for 5 minutes.
  • In a large bowl add all ingredients and gently fold to combine.
  • Spray a 12 cup muffin tin then using a 1/4 cup scoop, spoon mixture in each cup.
  • Bake for 30 minutes and serve with salad with sauce, snack or pack for school/work lunch.

Notes

You can add bacon to the mix. If not a fan forced oven bake for 5 to 10 minutes more.
